8 Pork loin (each about 120 grams)

8 slices Bacon
70 grams Feta
70 grams grated Emmentaler cheese

Preparation steps

1.

Rinse pork medallions and pat dry. Season with a little salt and pepper and wrap each with a slice of bacon. If desired, secure with a toothpick. Drain feta cheese and mash in a bowl with a fork. Add Emmental, spread on meat and press well.

Brush grill pan or grill with a little oil and grill medallions (on the bottom side) for about 4 minutes or until cheese is slightly melted. Turn over and grill for 4 minutes more. Remove meat from the grill and let rest briefly.

Arrange on plates and serve.
