- 1 ¼ cups Pumpkin seed
- ¾ cup sugar-free Muesli
- 1 Tbsp Coconut oil (melted)
- 3 cups water (plus extra for soaking)
- 1 Tbsp Agave syrup
- ½ cup Coconut flakes
- ¾ cup Cherries (pitted and halved)
- 2 Tbsps Goji berry
- 1 cup Strawberries (hulled and quartered)
- ⅔ cup dried Apricot (chopped)
- ½ cup coconut milk yogurt
- 4 sprigs mint (to garnish)

Preparation steps
1.
Place 110 g of the pumpkin seeds in a bowl and cover with cold water. Leave to soak for 4 hours.
2.
Meanwhile, preheat the grill to hot. Toss the muesli with the coconut oil and spread out on a grilling tray. Toast under the grill for 1 - 2 minutes until golden all over. Remove to one side and leave to cool.
3.
After soaking, drain the pumpkin seeds and place in a blender with 750 ml of water and the agave syrup. Blend on high until smooth. Strain through muslin into four serving mugs.
4.
Add the apricots and coconut flakes, and then top with a combination of the remaining ingredients, including the toasted muesli and remaining pumpkin seeds.
5.
Garnish with mint sprigs and serve immediately.
