This is a fun, summertime twist on the traditonal green smoothie. These popsicles are packed with nutrients including iron from the spinach and minerals like manganese and copper from the coconut milk.

Try adding half an avocado into this mix for a creamier texture and a heart-healthy serving of omega-3 fatty acids!

Preparation steps

Peel the mango, cut the flesh from the core, and chop roughly. Peel the banana and cut into slices. Rinse the spinach, mint, and parsley. Shake dry and pluck the leaves from the stem. Blend the herbs, spinach, banana, mango, lemon juice, matcha, and coconut milk finely in a blender. Add some cold water (about approximately 1/2 cup to the smoothie so it is light and creamy. Fill popsicle molds and freeze for about 2 hours. Insert popsicle sticks and freeze for at least another 2 hours, then serve.
