300 grams Cucumber
300 grams Beans (fresh or frozen)
150 grams Romaine lettuce
2 scallions
4 pickled Artichoke hearts
2 Tbsps White vinegar
4 Tbsps olive oil
1 Tbsp chopped parsley
salt

Preparation steps

1.

Peel the cucumber and cut into slices.

2.

Rinse the beans and blanch for about 4 minutes in plenty of salt water. Drain, rinse in cold water and drain.

3.

Rinse the lettuce, spin dry and cut into strips.

4.

Rinse the scallions and cut into wide rings.

5.

Halve the artichokes lengthwise.

6.

Mix the vinegar with the oil and season with salt and pepper. Toss the salad ingredients with the dressing. Serve sprinkled with parsley.
