Preparation steps

Green Power Salad preparation step 1

Clean, wash, peel and slice the kohlrabi thinly. Wash the kohlrabi leaves, remove the thick veins and cut the leaves into strips. Clean and wash the broccoli, cut off the stalk, peel and slice thinly. Cut the remaining broccoli into small florets.

Heat 1 tablespoon of oil in a frying pan. Steam the broccoli florets and the broccoli trunk pieces over medium heat for about 5 minutes. Add pumpkin seeds and kohlrabi leaves and steam for another 3 minutes. Season with salt and pepper. Remove from the pan and mix with the kohlrabi slices.

For the dressing, wash the thyme, shake dry and remove the leaves. Mix the remaining olive oil with lemon juice, mustard, honey, thyme, salt and pepper. Add capers and mix in. Mix the dressing with the salad ingredients.
