- 2 Tbsps butter
- ½ onion (chopped)
- 1 clove garlic cloves (finely chopped)
- 1 potato (diced)
- 4 cups vegetable stock
- 3 heads Broccoli (broken into florets)
- 1 pinch grated Nutmeg
- salt (to taste)
- peppers (to taste)
- 1 ⅓ cups cream (35% fat)

Preparation steps
1.
Heat the butter in a large pan and cook the onion, garlic and potatoes over a low heat for 5-8 minutes, until soft, but not browned.
2.
Add the stock, broccoli, nutmeg, salt and pepper and bring to a boil. Reduce the heat and simmer for 10 minutes. Reserve 4 broccoli florets for the garnish.
3.
Ladle the soup in batches into a blender or food processor and blend to a puree. Return to the pan and heat gently until piping hot, but not boiling. Remove from the heat and stir in the cream until blended.
4.
Ladle into serving bowls and garnish with cress and the reserved broccoli florets.
