400 grams cooked potatoes
2 Tbsps clarified butter

200 grams smoked Pancetta
3 Tbsps butter
1 Pear
2 sprigs Savory

Preparation steps

1.

Rinse green beans, trim and blanch in salted water until al dente, 6-8 minutes.

Meanwhile, peel the potatoes and cut lengthwise into slices. Fry in a pan in clarified butter until golden brown, about 5 minutes. Season with salt and pepper.

Meanwhile cut the pancetta into slices, then cut into strips. Fry in a hot pan with 1 tablespoon butter. Rinse the pears, halve, core and cut the halves into slices. Add to pancetta and fry together until light golden brown, 1-2 minutes.

Melt the remaining butter in a pot and add the savory. Drain beans, rinse briefly and add to the pan. Stir to coat in the butter. Season with salt and pepper. Arrange on plates with the pancetta and potatoes. Garnish with freshly ground pepper and serve.
