800 grams green Beans
400 grams waxy potatoes
2 Tbsps Canola oil
600 grams Smoked bacon (straight)
800 milliliters Beef broth
2 sprigs Savory
700 grams Pear
10 grams cornstarch
1 Tbsp Fruit Vinegar
salt
peppers (freshly ground)

Preparation steps

Peel the shallots and chop finely. Rinse the parsley and thyme, pluck off the leaves and chop finely. Trim beans, rinse and cut into 5 cm (approximately 2 inches) long pieces. Peel the potatoes, rinse and cut into slices.

Heat the oil and cook the shallots until soft. Add the potatoes, bacon, meat broth and savory and allow to simmer for about 25 minutes. Add the beans after about 18 minutes. Peel the pears, cut into slices and cook until soft, about 5 minutes. Remove the bacon from the broth, drain briefly and cut into slices. Combine the cornstarch with the vinegar and 1-2 tablespoons cold water until smooth, stir into vegetables to thicken. Bring to a boil, so sauce is creamy. Lay the bacon in again, add herbs and season with salt and pepper.
