1 ⅔ cups Feta
½ handful Basil (leaves, finely chopped)
1 tsp olive oil
1 small onion (halved, sliced very thinly)
3 Tomatoes (quartered, cored)
1 handful Arugula (hard stems removed)
½ red Apple (cored)
lemon juice
4 thin Flatbread (or 2 slices tramezzini bread)

Preparation steps

1.
Place half the feta in a bowl. Mix with the basil and olive oil and season with a little ground black pepper. Slice the remaining feta.
2.
Slice the apple into thin wedges and drizzle lemon juice over at once.
3.
Slice the bread in half and spread the basil-feta on the lower half. Layer the onion, tomato, feta slices, rucola and apple on top.
4.
Place the top half of the flat breads on the sandwiches and serve e. g. as a summer snack.
