10 slices Cheshire cheese
4 pink Grapefruit
½ bunch parsley
75 grams softened butter
1 Tbsp green peppers (crushed)
2 tsps freshly grated Lemon peel
5 slices Toast

Preparation steps

1.

Cut each cheese slice into triangles. Peel grapefruit and cut into 1 cm (approximately 1/3 inch) thick slices, then halve each slice and reserve juice as you go. Rinse parsley, pluck leaves and finely chop.

2.

Mix softened butter with crushed peppercorns, lemon zest and a little grapefruit juice. Spread butter mixture on toasted bread and slice into quarters. Top each with 2 cheese triangles and 1/2 grapefruit piece. Sprinkle with parsley and serve.
