- ¾ cup all-purpose flour (or gluten free flour)
- ¼ cup Amaranth flour
- ½ cup coconut sugar
- 1 tsp baking soda
- 1 pinch salt
- ½ tsp Cider vinegar
- ½ tsp vanilla extract
- 1 cup apple sauce
- 1 ripe Banana
- To decorate
- Candied cherry

Preparation steps
1.
Heat the oven to 180°C (160° fan) 350°F gas 4. Place paper cups or cases in 6 muffin tins.
2.
Sift the dry ingredients into a mixing bowl.
3.
Mix together the wet ingredients.
4.
Stir the wet ingredients into the dry, with the mashed banana until just combined.
5.
Divide between the cups or cases and bake for 25-30 minutes, until a skewer inserted into the centre comes out clean. Cool in the tins for 10 minutes, then place on a wire rack to cool completely.
6.
Place a glace cherry on top of each cake.
