- 1 ⅓ cups Spelt flour (plus extra for dusting)
- 1 pinch cayenne pepper
- ½ cup dairy-free margarine (scant)
- 4 eggs
- 1 ¾ cups grated dairy-free Cheese
- 1 pinch salt
- 1 pinch freshly ground Black pepper
- Sesame seeds
- Poppy seeds

Preparation steps
1.
Heat the oven to 220°C (200° fan) 425°F gas 7. Line 2 baking trays with non-stick baking paper.
2.
Put the flour and cayenne pepper in a mixing bowl and rub in the margarine until the mixture resembles breadcrumbs.
3.
Mix in 1/2 of the grated cheese.
4.
Beat 2 eggs and add, mixing to form a soft dough. Divide the dough in half.
5.
On a lightly floured surface, roll out one half to 2mm thick.
6.
Beat 1 egg with the salt and pepper, then stir in 1/2 of the remaining grated cheese. Spread over the top of the dough.
7.
Cut the dough into 1cm|1/2" wide strips and place on a baking tray.
8.
Roll out the remaining dough. Repeat the process with the remaining egg and cheese.
9.
Cut into small squares and sprinkle with sesame seeds or poppy seeds. Place on a baking tray.
10.
Bake the sticks for 10-12 minutes and the small squares for 5-8 minutes until golden. Place on a wire rack to cool.
