½ small onion (finely chopped)
1 tsp mild korma Curry paste
cup Red lentils
1 cup salt (low sodium)
1 medium carrot (grated)
1 tsp Coriander
2 slices Wholemeal Bread (made into breadcrumbs)
1 large egg (beaten)

Preparation steps

1.
Heat 2 tsp of the oil in small pan. Add the onion and cook for a minute. Stir in the korma paste and cook for a minute.

Add the lentils and the stock. Simmer for about 10 minutes until the lentils are very soft. Add the carrot and coriander and cook for a few more minutes until the mixture begins to dry. Remove the pan from the heat and cool.
3.
Stir in the breadcrumbs. Add the egg and then shape into 8 patties.
4.
Heat a little oil in a non stick frying pan and cook the patties for 2-3 minutes on each side.
