- 4 large Sweet potato (peeled)

- ¼ cup butter
- cilantro (or parsley)
- freshly ground Black pepper
Preparation steps

Cut the potatoes into large chunks and cook in boiling salted water until tender – about 14-18 minutes.

Drain thoroughly, then set the pan over a low heat and shake the pan to drive off any excess moisture.

Mash thoroughly with the butter until smooth then season generously and serve with a garnish of coriander.
