3 Tbsps olive oil
1 onion (finely chopped)
2.333 cups roasting potatoes (peeled and cut into chunks)
2 ½ Tbsps butter (melted)
2 cups fresh breadcrumbs

Preparation steps

1.
Heat the olive oil in a large saucepan and sweat the onion over a medium heat for 4-5 minutes until soft, stirring occasionally.

Add the beef mince, increase the heat, and brown all over for 5-6 minutes, then remove from the heat and set to one side.

Pre-heat the oven to 200°C | 400F | gas 6.

Cook the potatoes in boiling, salted water until tender; usually 15 minutes. Drain and allow to cool a little before mashing with the butter and seasoning until smooth.

Mix the beef mince with the potato until well combined; the mixture should be a little wet.

Take small handfuls of the mixture and form into patties between your palms. Roll carefully in the breadcrumbs and arrange on a lined baking sheet.
7.
Bake for 15-20 minutes until crispy on the outside. Serve stacked with sprigs of parsley as a garnish on top.
