- 4 ozs gluten-free Sausage meat
- 1 tsp chopped garlic cloves
- 12 ozs large green olives (pitted, drained)
- ½ cup gluten-free all purpose flour
- 1 large egg (beaten)
- ½ cup dry gluten-free breadcrumbs
- 2 tsps olive oil
- vegetable oil (for deep-frying)
Preparation steps

Mix together the sausagemeat and garlic.

Stuff each olive with 1/4-1/2 teaspoon of the sausage mixture.

Spread the flour on a large plate.

Spread the bread crumbs on another large plate and moisten with the olive oil, stirring to distribute the oil evenly.

Roll the olives in the flour, coating them evenly and shaking off the excess. Dip them in the egg, then in the breadcrumbs.
6.
Cover with cling film and chill for 20 minutes.
7.
Heat the oil in a deep fryer or heavy-based pan.
8.
Cook the olives in batches in the hot oil for about 3 minutes, until golden and the sausage stuffing is cooked through.
9.
Drain on absorbent kitchen paper.
