- 3 Tbsps oat flour
- 3 Tbsps Brown rice flour
- 3 Tbsps Potato starch (plus extra for dusting)
- ½ tsp gluten-free Baking powder
- 2 eggs
- 5 Tbsps sugar
- 1 tsp vanilla extract
- ⅓ cup butter (melted and cooled)

Preparation steps
1.
Heat the oven to 180°C (160° fan) 350°F gas 4. Brush 20 madeleine tins with melted butter and dust with flour.
2.
Whisk together the flours and baking powder and set aside.
3.
Whisk together the eggs and sugar until foamy and tripled in volume. Fold in the vanilla and melted butter, then sift in the flour mixture and fold in gently.
4.
Spoon into the madeleine tins, filling each cavity about 2/3 full.
5.
Bake for 12-14 minutes until the edges are golden. Remove from the tins immediately, then place on a wire rack to cool completely.
