- ⅝ cup warm water
- 1 heaped Dried yeast
- 2 ½ Tbsps flaxseed
- water
- 1 ½ Tbsps sunflower oil
- 1 ½ Tbsps honey
- ½ cup Buckwheat flour
- ¼ cup quinoa flour
- ⅓ cup Potato starch
- ½ cup Tapioca flour
- ⅛ cup Almond flour
- ½ Tbsp xanthan gum
- ½ tsp baking soda
- ¾ tsp salt

Preparation steps
1.
Grease a 20cm x 10cm|8" x 4" loaf tin

Mix together the water and yeast and leave to stand for 5 minutes until frothy.
3.
Put the ground flax into a measuring jug and water to the 175ml|6 fl oz mark. Stir and leave to stand for 5 minutes.

Add the oil, honey and the flax mixture to the yeast mixture and stir to combine.

Put the dry ingredients into a mixing bowl and stir well. Add the wet ingredients and whisk with an electric whisk until blended.
6.
Put into the tin and cover with oiled cling film. Leave to stand for 1 hour.
7.
Heat the oven to 180°C (160° fan) 350°F gas 4.
8.
Bake for 45–50 minutes until cooked through. Cool in the tin for 10 minutes, then place on a wire rack to cool completely.
