Add some oatmeal or nuts on top for an even more mustic look and more protein.

- 1 Soy flour (plus extra for dusting)
- ½ cup Potato starch
- 2 ¾ cups Cornflower
- 1 tsp xanthan gum
- 1 oz ground Psyllium
- 2 tsps active dry yeast
- 1 tsp salt
- 1 Tbsp caster sugar
- 2 tsps Vinegar
- 1 Tbsp sunflower oil (plus extra for brushing)
- 2 Tbsps plain Yogurt
- 1 ⅓ cups warm water
- ⅛ cup warm milk

Preparation steps
1.
Put the dry ingredients in a mixing bowl and stir to combine.

Whisk together the vinegar, oil, yogurt, water and milk and pour into the dry ingredients. Mix well and leave to stand for 1 hour.

Turn out onto a lightly oiled surface and shape into a round loaf. Place on a baking tray lined with non-stick baking paper. Cover and leave for 1.5 hours, until almost doubled in size.
4.
Heat the oven to 240°C / 475°F.

Brush the top of the loaf with oil and dust with a little soy flour.
6.
Bake for about 50 minutes until golden. Cool on a wire rack covered with a clean tea towel - this keeps the bread soft.
