Even smarter

This heart country loaf retains all the flavor of a classic loaf but contains no gluten.

Add some oatmeal or nuts on top for an even more mustic look and more protein.

1 Soy flour (plus extra for dusting)
½ cup Potato starch
2 ¾ cups Cornflower
1 tsp xanthan gum
1 oz ground Psyllium
2 tsps active dry yeast
1 tsp salt
1 Tbsp caster sugar
2 tsps Vinegar
1 Tbsp sunflower oil (plus extra for brushing)
2 Tbsps plain Yogurt
1.333 cups warm water
cup warm milk

Preparation steps

1.
Put the dry ingredients in a mixing bowl and stir to combine.

Whisk together the vinegar, oil, yogurt, water and milk and pour into the dry ingredients. Mix well and leave to stand for 1 hour.

Turn out onto a lightly oiled surface and shape into a round loaf. Place on a baking tray lined with non-stick baking paper. Cover and leave for 1.5 hours, until almost doubled in size.

Heat the oven to 240°C / 475°F.

Brush the top of the loaf with oil and dust with a little soy flour.

Bake for about 50 minutes until golden. Cool on a wire rack covered with a clean tea towel - this keeps the bread soft.
