- 1 ¾ cups gluten-free Whole wheat flour
- ½ tsp xanthan gum
- 1 tsp Guar Gum
- 1 ¼ tsps baking soda
- 1 tsp ground cinnamon
- 1 tsp Ginger powder
- ¼ tsp salt
- ⅛ tsp grated Nutmeg
- ⅛ tsp ground cloves
- ½ tsp Anise seed
- 1 Tbsp dark brown sugar
- 1 Tbsp butter (melted)
- 1 large egg
- ½ cup warm water
- ½ cup honey
- 1 cup chopped almonds
- ½ cup Golden raisins
- 1 Tbsp chopped Candied fruit
Preparation steps

Heat the oven to 180°C (160°C fan ) 350°F, gas 4. Grease a a large loaf tin and line the base with non-stick baking paper.

Put all the dry ingredients into a mixing bowl and stir to blend. Make a well in the centre.

Mix together the butter, egg, water, and honey and pour into the dry ingredients. Mix well until well combined. Stir in the almonds, sultanas and peel.
4.
Put into the tin and bake for 35-45 minutes until cooked through. Cool in the tin for 10 minutes, then place on a wire rack to cool completely.
