- 1 ¼ cups oat flour
- 1 Tbsp gluten-free Baking powder
- ½ tsp baking soda
- 1 pinch salt
- 1 tsp ground cinnamon
- ⅓ cup sugar
- 3 Tbsps sunflower oil
- 2 eggs
- 1 large Apple (finely chopped)
- ¾ cup dried Cranberry

Preparation steps
1.
Heat the oven to 180°C (160° fan) 350°F gas 4. Place paper cases in 12 muffin tins.
2.
Mix together all the dry ingredients in a mixing bowl.
3.
Whisk together the eggs and oil, then stir in the apple and cranberries.
4.
Pour into dry ingredients and mix well.
5.
Spoon into the paper cases and bake for 15-20 minutes until firm and risen. Cool in the tins for a few minutes, then place on a wire rack to cool completely.
