63 ozs bone-in, cut-up chicken (thighs; drumsticks; and wings)
3 tsps ground Cumin
2 tsps Chili powder
1 ½ tsps coarse salt
2 cups Pineapple juice
½ cup honey
1 ½ Tbsps Corn starch
1 ½ Tbsps water
1 ½ Tbsps grated Lime zest
6 Tbsps freshly squeezed Lime juice
½ tsp crushed Red pepper flakes
Oil (for grill grate)
6 Pineapple (fresh or canned)
2 fresh Limes (rinsed and cut into wedges)

Preparation steps

Preheat grill to medium-high heat.

Rinse the chicken under cold running water and pat completely dry with paper towels. In a small bowl, combine cumin, chili powder, and salt. Rub dry seasoning evenly over chicken pieces.

In a small saucepan, bring pineapple juice and honey to a boil. Cook for about 10 to 12 minutes, until slightly reduced. In a small bowl, combine cornstarch and water, stir well until completely blended. Add cornstarch mixture to pineapple juice mixture, stirring constantly with a whisk. Bring to a boil, and cook for 2 minutes, stirring constantly. Remove pan from heat source, and stir in the lime rind, lime juice and crushed red pepper.

Coat grill grate with oil.

Brush pineapple rings on both sides lightly with pineapple and lime mixture. Set aside.

Place chicken pieces on prepared grill grate, baste with pineapple juice mixture. Cover and grill for about 6 or 7 minutes on each side, or until cooked through, basting frequently with juice mixture. Do not over cook the chicken.
7.
Transfer cooked chicken to serving platter. Grill pineapple slices until golden brown. Cut pineapple rings into bite-size pieces. Garnish platter with grilled pineapple and lime wedges. Serve with grilled corn and cole slaw, if desired.
