16 ozs cooking Apple peeled and cored weight (reserve the peel and cores)
2 cups sugar
4 Tbsps crystallized ginger
1 Tbsp water

Preparation

1 Cutting board, 1 Small knife, 2 Bowls, 1 Fine grater, 1 Citrus juicer, 1 Tablespoon, 1 Sieve, 1 Paper towel, 1 Whisk, 1 Large knife

Preparation steps

1.
Cut the apples into small dice and put into a large heavy-based pan with the sugar, ginger and water.
2.
Tie the peel and cores in a piece of muslin and put into the pan. Cover and leave to stand for at least 6 hours.
3.
Heat gently, stirring, until the sugar has dissolved. Increase the heat and bring to a boil.
4.
Boil rapidly until setting point is reached. Remove the muslin bag.
5.
Spoon into hot sterilised jars, cover, seal and label.
