5 cups semi-waxy potatoes
1 cup Bacon (streaky, American)
1 Red onion
1 cup milk
3 eggs
Nutmeg

Preparation steps

1.
Steam the potatoes for around 20 minutes. Remove, leave to cool, peel and slice.
2.
Heat the oven to 200°C (180°C in a fan oven), 400°F, gas 6 and line a baking tin with greaseproof paper.
3.
Fry the bacon and add the onions. Add the potato slices and then remove from the heat.
4.
Mix together the milk and the eggs and season with salt, ground black pepper and nutmeg.
5.
Transfer the potato mixture to the baking tin and add the egg mixture. Spread evenly and press down gently into the tin. Bake for 45-50 minutes, leave to cool slightly and then serve.
