6 ½ cups lean Pork belly (cut ito 2.5cm|1 inch pieces)
1 tablespoon Oil
3 large onions (roughly chopped)
1 teaspoon paprika
2 cups canned tomatoes
2 cups chicken stock (or vegetable stock)
2 Bell pepper (cut into wedges)
1 bay leaf
salt

Preparation steps

Heat the oven to 180°C (160° fan) 350°F gas 4.

Heat the oil in a flameproof casserole dish and add the onion and pork. Cook for about 5 minutes until golden.
3.
Stir in the paprika, followed by the tomatoes and stock. Season to taste with salt and pepper. Add the yellow pepper and the bay leaf.
4.
Cover and cook in the oven for about 1-1 1/2 hours, until the pork is tender.
