- 2 egg yolks
- 50 milliliters olive oil
- 50 milliliters Peanut oil
- 60 grams Galangal
- 1 tsp soy sauce
- salt
- white, freshly ground peppers
- 20 grams onions
- 3 garlic cloves
- 1 scallion
- 1 red chili pepper
- Lime juice (to taste)

Preparation steps

For the galangal aioli, mix the egg yolks with an electric mixer until fluffy. Continue to beat, and gradually incorporate the oil. Add enough oil until a thick mayonnaise forms. Peel and grate the galangal, then add to the mayonnaise. Add the soy sauce, and season to taste with salt and pepper.

Peel the onion and garlic. Trim the scallions. Rinse the chili, halve lengthwise, and remove the seeds and membranes. Finely dice all the prepared vegetables. Mix the prepared vegetables into the mayonnaise, then season with lime juice.
3.
This goes well with chicken, veal, beef, and pork.
