200 grams Chicken breasts
100 grams Rice noodles
2 garlic cloves
3 Tbsps vegetable oil
2 stalks Celery
2 scallions
½ Bell pepper
1 Tbsp Red Curry paste
½ l Chicken broth (canned)
1 Tbsp sugar
4 Tbsps Fish sauce
1 Tbsp pickled Daikon radish (canned)

Preparation steps

Rinse chicken and pat dry and cut into thin strips. Soak rice noodles in warm water for about 10 minutes, then cut into 20 cm (approximately 8 inches) pieces with kitchen shears. Peel garlic and chop finely and fry in oil and set aside. Rinse celery, drain and pat dry and slice sticks and leaves into small pieces. Rinse scallion, drain and pat dry and cut into rings.

Dip rice noodles briefly in boiling water and drain. In a large pan, heat chicken broth and add sugar, fish sauce, curry paste, radish, peppers, green onions, celery and bring to a boil. Add chicken to pan and remove pan from heat and let stand for about 4 minutes. To serve, place rice noodles and garlic in four bowls and ladle hot soup over noodles and garlic.
