50 milliliters lemon juice
6 Artichoke about 125 grams (approximately 4.5 ounces)
3 garlic cloves
200 grams Cherry tomatoes
2 Tbsps finely chopped parsley
2 Tbsps olive oil
salt

Preparation steps

1.

Heat a large pot of 1 liter of water (approximtely 1 quart) with a little salt and the lemon juice.

Cut off the tips of the artichokes (upper third) with kitchen scissors and remove the outer leaves. Peel the artichokes around the veins and peel the stalk tapering downward. Immediately fold into the lemon water and boil on low heat for 10 minutes uncovered. Remove from heat and allow to cool in the liquid. Drain the artichokes.

In a large nonstick skillet, heat oil and fry the artichokes over medium heat for 5 minutes. Add the garlic and parsley and fry another 2 minutes, turning occasionally. Season with salt and pepper. Serve artichokes warm.
