- 1 ⅔ cups peas
- 1 clove garlic cloves (very finely chopped)
- 1 shallot (very finely chopped)
- 1 Tbsp white balsamic vinegar
- 1 Tbsp grapeseed oil
- 1 tsp lemon juice
- 1 tsp honey
- 4 large Ciabatta
- freshly shaved Parmesan (to garnish)

Preparation steps
1.
Blanch the peas in salted water for around 4 minutes. Drain well.
2.
Mix the garlic, shallot, vinegar, oil, lemon juice and honey into the peas. Crush lightly with a fork to form a smooth spread. Cool until lukewarm.
3.
Heat the grill function in the oven.
4.
Toast the bread slices under the grill for 1-2 minutes on each side until golden brown.
5.
Season the spread to taste with salt and ground black pepper, divide between the pieces of toast and served garnished with parmesan.
