- For the chickpea puree
- 4 cups canned chickpeas (drained and rinsed)
- 1 clove garlic cloves (crushed)
- ½ cup olive oil
- juiced lemons
- 2 tsps paprika
- snipped Chives (to garnish)
- For the herb cream cheese
- ⅞ cup cream cheese
- 2 Tbsps natural Yogurt
- 2 Tbsps chopped parsley
- 2 Tbsps chopped mint
- 1 Tbsp chopped thyme

Preparation steps
1.
For the chickpea puree, place the chickpeas, garlic, olive oil, lemon juice and one teaspoon of the paprika in a food processor and pulse to make a coarse puree. Season with salt and pepper and place in a serving bowl. Scatter over the remaining paprika and the snipped chives.

For the herb cream cheese, beat together the cream cheese, yoghurt and chopped herbs and season with salt and pepper.
3.
Serve the chickpea puree and herb cream cheese with the courgettes and crackers.
