- 2 Tbsps vegetable oil
- 1 onion (peeled and finely sliced)
- 1 tsp Cumin
- 1 Tbsp Curry powder
- 2 Chicken breasts (skinned and cut into chunks)
- 1 ½ cups chicken stock
- 2 Banana (peeled and chopped)
- 2 green Apple (peeled and diced)
- ⅜ cup double cream
- salt

Plantains - Caribbean bananas - are widely available and make an exotic substitute for the banana.
Preparation steps
1.
Heat the oil in a pan and sweat the onion, cumin seeds and curry powder for about 5 minutes until softened.
2.
Add the chicken, cook until starting to turn golden, then add the stock and simmer gently for 10-15 minutes until the chicken is cooked.
3.
Add the fruit and cream, reheat and season, then serve with rice.
