Combine the mozzarella, ham and apple together in a bowl.

Preheat the oven to 150°C | 300F | gas 2.

Place the pancakes on a work surface and add some of the cheese mixture to the centre of each one. Season well.
4.
Fold the pancakes into squares and turn upside down onto a buttered baking dish.
5.
Dot the pancakes with knobs of butter and transfer to the oven. Cook for 15 minutes until golden and bubbling. Serve straight from the oven with a garnish of chervil.
