- 1 onion
- 2 garlic cloves
- 2 centimeters fresh ginger
- 1 small red chili pepper
- 100 grams cooked ham
- 200 grams Veal shank
- 5 Tbsps Peanut oil
- 200 grams Basmati rice
- salt
- freshly ground peppers
- 1 generous pinch Saffron
- ½ Curry powder
- 600 milliliters Chicken broth
- 1 Papaya (300 grams)
- 1 tsp Sambal oelek
- 1 tsp lemon juice

Preparation steps

Peel the onion, garlic and ginger and finely chop. Rinse the chile pepper, cut in half lengthwise, remove the seeds, remove the white membranes and finely chop. Cut the ham and veal into very small pieces. Saute the prepared ingredients in 4 tablespoons oil in a hot wok for a few minutes. Stir in the rice and season with salt, pepper, saffron and curry powder. Pour in the broth and bring to a boil. Then reduce the heat and cook the rice, covered, about 15 minutes.

Peel the papaya and cut the flesh into small pieces. Season the rice with sambal oelek, fold in the papaya pieces with the lemon juice and serve.
