- 3 Chicken breasts
- 2 Tbsps vegetable oil
- 2 stalks Celery
- 2 small red Apple
- 500 Apple (Granny Smith)
- 1 tsp lemon juice
- 1 sm can Mandarin orange
- 1 Tbsp raisins
- 1 bunch parsley
- 150 grams Mayonnaise
- salt
- peppers
- Lettuce (for serving)

Preparation steps
1.
Rinse the chicken, pat dry, season with salt and pepper, cook in hot oil around 6 minutes, let cool, cut into pieces. Rinse apples, dry, quarter, remove the seeds and core, chop, sprinkle with lemon juice.

Drain Mandarins, keeping 1 tablespoon of liquid. Rinse celery, trim, cut into slices. Soak raisins in Mandarin liquid 5 minutes. Rinse the parsley and chop finely.

Mix chicken, celery and fruit in a bowl, season with salt and pepper, mix with mayonnaise and leave for 30 minutes. Mix with parsley before serving. Serve chicken salad in lettuce leaves on plates.
