1 Tablespoon, 1 Teaspoon, 1 Small knife, 1 Large knife, 1 Cutting board, 1 Paper towel, 1 Mini food processor, 1 Casserole dish, 1 Tweezers, 1 Small bowl, 1 Whisk, 1 Fine grater, 1 Plastic wrap, 1 Citrus juicer
Preparation steps

Heat the oven to 200°C (180° fan) 400°F gas 6. Butter a baking dish.

Place the rhubarb, half the fructose and the water in a pan. Bring a gentle simmer. Cook for 5 minutes, until the rhubarb is just tender, but still holding its shape.

Generously butter the sliced bread. Cut the slices into squares or triangles.

Place a layer of the bread, slightly overlapping, in the baking dish.

Spoon over half the cooked rhubarb, then layer with the remaining bread. Spoon over the remaining rhubarb.

Heat the milk in a pan and bring to a boil. Remove from the heat.

Whisk together the eggs and remaining fructose until blended.

Stir the cream into the milk and pour on to the egg mixture, stirring well. Stir in the vanilla.
9.
Strain the egg mixture through a sieve over the bread and rhubarb, pressing the bread down gently.
10.
Bake for 45 -60 minutes until just set. Remove from the oven and dust with fructose powder.
