- For the dough
- 240 grams Pastry flour
- 160 grams butter
- 80 grams sugar
- 3 tablespoons Whipped cream
- 1 pinch salt
For the dough: Combine all dough ingredients in a bowl and knead with the dough hook of a hand mixer until smooth. Wrap in plastic wrap and chill for at least 30 minutes.
For the topping: Rinse cherries and remove pits. Rinse plums, cut in half, remove seeds and cut into wedges.
For the filling: Combine all filling ingredients in a bowl and stir until smooth.
Roll out dough between two sheets of parchment paper so that it is slightly larger than the pan. Press into a tart pan.
Pour filling into dough and sprinkle fruit onto filling in three sections.
Bake in an oven preheated to 200°C (approximately 390°F) for about 45-50 minutes. Cover with aluminum foil if crust becomes too dark.
Remove tart from the oven and let cool. Carefully remove from pan and plate on a serving plate. Stir glaze, apple juice and sugar until smooth, add water and bring to a boil. Remove from heat and drizzle over tart. Let set, slice and serve with coffee, as desired.
