Preparation steps

Preheat the oven to 350°F. Grease a springform pan with butter and dust with flour.

For the dough, beat room temperature butter until creamy. Add the egg alternately with the sugar and stir. Then add the salt. Mix the flour with the baking soda and gradually stir in with the milk until the dough is smooth and spreadable. Spread into the springform pan and smooth. Bake in the oven for about 20 minutes until golden brown. Remove from the oven, let cool slightly, then place on a wire rack to cool.

For the topping, rinse the berries, pick through and wipe dry, and halve the strawberries. Peel, halve and slice the kiwifruit. Rinse the apricots, cut in half, remove the pits and cut into wedges. Spread the jam onto the dough and decoratively place the fruit on top. Cook the glaze with 1 tablespoon sugar and water according to package directions and spread over the fruit. Allow to cool and serve.
