100 grams Pastry flour
¾ packet Baking powder (15 grams)
½ tsp ground cinnamon
1 generous pinch salt
170 grams softened Butter substitute
150 grams brown sugar
1 packet Bourbon vanilla powder (8 grams)
3 eggs
80 grams ground almonds
100 grams Oats
50 grams chopped Hazelnuts
100 milliliters milk
2 Kiwi
3 Nectarine
2 Banana
lemon juice
200 milliliters clear Apple juice
1 tsp sugar
1 Tbsp cornstarch

Preparation steps

Preheat the oven to 180°C (approximately 350°F). Line the bottom of the springform pan with parchment paper and grease the sides. Mix the spelt and wheat flour with the baking powder, cinnamon and salt. In a mixing bowl beat the softened margarine until fluffy with the brown sugar and vanilla sugar. Stir in the eggs one at a time.

Add the flour mixture, almonds, oatmeal and chopped nuts and mix well. Stir in enough milk so that the dough drips from the whisk. Spread the batter into the springform pan and bake on the middle rack for 35 to 40 minutes. Check for doneness with a toothpick. Cool slightly, release from the springform pan and leave to cool competely.

Peel the kiwis and cut into thin slices. Rinse the nectarines, pat dry, cut in half, remove the pits and cut the flesh into small pieces. Peel the banana, cut into slices and sprinkle with lemon juice. Arrange the fruit decoratively on the oatmeal crust.

Bring the juice to a boil. Mix the sugar and cornstarch, and stir with 1 tablespoon of water. Stir the mixture into the boiling apple juice and bring to a boil. Allow to cool slightly, stirring occasionally and pour the glaze over the cake while still hot. Allow to set, then serve slices.
