- 4 cups fresh Pumpkin (cut into large chunks)
- 4 ½ cups Dried Fruit (golden raisins, apricots, dates)
- 8 cups water
- 8 whole cloves
- 2 Cinnamon stick
- 1 lemon (zest only)
- 1 cup sugar
- 2 cups Vegetable broth
- 2 Tbsps unsalted butter
- 2 cups dry Couscous

Preparation steps

In a large saucepan, place pumpkin, fruit, water, cloves, cinnamon, zest, and sugar. Bring to a boil, stirring frequently, and simmer, covered, for about 20 minutes or until pumpkin and fruit is tender and syrup has thickened slightly.

Bring vegetable broth to a boil. Add butter and couscous, remove from heat and cover. Let stand for 5 minutes. Spoon stewed pumpkin and fruit over couscous and serve.
