- ¾ cup finely chopped Dried apricot
- ½ cup raisins
- 1 tsp baking soda
- ⅞ cup boiling water
- ¾ cup caster sugar
- 2 eggs
- 1 Tbsp Apricot Jam
- 2 Tbsps butter (melted)
- ½ cup milk
- 1 Tbsp Vinegar
- 1 ¼ cups self-rising flour
- 1 pinch salt
- 0.333 cup chopped, roasted Hazelnuts
Preparation steps
1.
Heat the oven to 180°C (160° fan) 350°F gas 4. Grease a large pudding basin.

Put the apricots, raisins and bicarbonate of soda in a bowl, then pour over the boiling water. Leave to stand for 30 minutes.

Whisk the sugar and eggs in a mixing bowl until light and fluffy. Add the apricot jam and mix well.

Mix together the butter, vinegar and milk and stir into the egg mixture until well mixed.
5.
Sift in the flour and salt and mix well, then stir in the hazelnuts and drained apricots and raisins.
6.
Pour into the basin and bake for 35-45 minutes, until risen and cooked through.
7.
Turn out onto a serving plate and decorate with fresh apricots and hazelnuts. Serve with pouring cream.
