3 cups Cucumber (chopped)
1 Tbsp gin
2 tsps pink peppercorns
2 Tbsps Pecan (roughly chopped)

Preparation steps

1.
Pick a small handful of mint leaves and roughly chop. Combine them with the lime juice, water, and agave nectar in a small saucepan.
2.
Cook over a moderate heat, stirring occasionally, until boiling. Remove from the heat and leave it to cool slightly.
3.
Blitz the cucumber in a food processor until smooth. Add the syrup and gin, and blitz again until smooth. Stir in the peppercorns.
4.
Churn the mixture in an ice-cream machine according to the manufacturer's instructions. Once soft and frozen, scoop into a freezable container and freeze for at least 4 hours.
5.
Remove the sorbet 10 minutes before serving. Scoop out and serve with a garnish of mint leaves and pecans.
