300 grams carrots
50 milliliters Vegetable broth
5 Tbsps Orange juice
1 Tbsp honey
salt
freshly ground peppers
200 grams Frisée (Or curly Endivensalat)
1 Tbsp Basil (chopped)
2 tsps balsamic vinegar
3 Tbsps olive oil

Preparation steps

1.

Rinse carrots, peel and cut in half if desired. 

2.

Mix vegetable broth in a saucepan with 3 tablespoons orange juice, honey and season with salt and pepper. Heat, add carrots, cover and simmer for 10 minutes.

Rinse frisee lettuce, trim, spin dry and mix in a bowl with basil.

4.

For the dressing, mix balsamic vinegar in bowl with 2 tablespoons orange juice, oil and carrot stock (without carrots) and season with salt and pepper.

5.

Arrange carrots on the salad and drizzle the dressing over top. Serve immediately.
