- 1 egg
- salt
- 2 Tbsps Pastry flour
- 2 Tbsps breadcrumbs
- freshly ground peppers
- sunflower oil
- 2 Tomatoes
- 1 Tbsp White vinegar
- 2 Tbsps Whipped cream
- 2 Tbsps Basil
Preparation steps
Rinse and trim the zucchini and cut into 0.6 cm (approximately 1/4 inch) thick slices.
Whisk the egg in a bowl and season with salt.
Dust the zucchini slices with flour, dip in the egg and finally coat in the breadcrumbs. Press lightly to coat.
Fry the zucchini slices in a pan with hot oil in portions until golden brown, 1-2 minutes. Drain on paper towels.
Rinse the tomatoes, cut out the stems and cut into slices. Drizzle with the vinegar and 1 tablespoon oil. Season with salt and pepper. Stir the sour cream until smooth and season with salt and pepper. Cut 2 of the zucchini slices into quarters, then layer the remaining discs, alternating with the tomatoes to form a tower. Garnish with 4 dollops of sour cream around the tower and place the quartered zucchini slices on top. Serve garnished with fresh basil.
