Drizzle 4 large slices of beefsteak tomato with a little oil and vinegar. Season with a little salt and pepper and top with a large slice of mozzarella. Layer tomatoes and cheese in a diminishing size manner and drizzle each layer with vinegar and oil, season with salt and pepper. Finish with a small plum tomato and small mozzarella ball. Secure tomato and cheese towers with wooden skewers. Garnish with basil.
