- 300 grams Cherry tomatoes
- 1 garlic clove
- 5 Tbsps olive oil
- 2 small thyme
- Sea salt
- freshly ground peppers
- 8 slices Toast
- 2 scoops Buffalo mozzarella (each about 125 grams)
- 1 handful Basil
- 4 Tbsps green Pesto

Preparation steps

Rinse and halve tomatoes. Peel garlic and squeeze through a garlic press into a bowl. Add tomatoes with 3 tablespoons of olive oil, season with thyme, salt and pepper, mix well. Spread on a lined with parchment paper baking sheet and bake in preheated oven at 200°C (approximately 400°F) for about 20 minutes.

Cut 16 rings approximately 7 cm in diameter (approximately 2 1/2 inch) from the toast. Heat remaining oil in a pan and cook bread on both sides until crispy, drain on paper towels. Cut mozzarella into slices. Rinse basil and shake dry. Remove tomatoes from the oven, spread some with pesto and arrange on a plate. Layer with toasted bread circles, sliced mozzarella, basil leaves and baked tomatoes. Serve garnished with pesto.
