- 600 grams predominantly waxy Sweet potato
- 200 grams Boiled sausage
- 50 grams clarified butter
- 2 onions
- Bell pepper (1 each red and green)
- ½ tsp dried, crushed chili peppers
- 2 slices Pineapple (canned)
- salt
- peppers (freshly ground)

Preparation steps
1.
Peel, rinse and cut sweet potatoes into small strips. Remove cooked sausage from skin and cut sausage into strips.
2.
Peel onions, halve lengthwise and cut into wedges. Cut peppers into quarters, remove seeds and ribs, rinse and cut into strips.
3.
Heat clarified butter in a large frying pan. Add sausage and cook briefly. Remove sausage and set aside.
4.
Add sweet potatoes to pan and fry, turning occasionally, about 10 minutes. Add onions and chile pepper and braise a few minutes.
5.
Cut pineapple into pieces and add to pan along with cooked sausage. Cook until heated through. Season with salt and pepper.
