5 Tbsps clarified butter
2 onions
1 Tbsp pickled green peppercorns
250 grams Blood sausage
1 Tbsp scallions

Preparation steps

1.

Peel the potatoes and cut into slices. Rinse the apples and cut into quarters. Remove the core and cut into slives.

Heat half the clarified butter in a pan. Saute the apples briefly and then remove from the pan. Saute the potatoes until golden brown, turning occasionally. Peel the onion and cut into rings. Saute with the potatoes.

3.

Coarsely chop the green pepper and mix with the apples, potatoes, and onions. Season with salt.

4.

In a second pan, heat the remaining butter. Cut the sausage into slices and cook briefly on both sides. Arrange the potatoes on a plate with the sausage and sprinkle with chives.
