- 500 grams Chinese Wheat noodle
- 300 grams Tofu
- 100 grams Cashews
- 100 grams Snow peas
- 1 red Bell pepper
- ½ fresh Pineapple
- 4 Tbsps soy sauce
- 5 Tbsps sesame oil
- 4 tsps Chile oil

Preparation steps

Pat tofu dry and cut into small cubes, sprinkle with soy sauce and marinate for 10 minutes, then drain. Roast cashew nuts in a dry frying pan. Rinse snow peas and blanch in salted water for 2 minutes. Rinse bell pepper, cut in half, remove seeds and white ribs and cut into strips. Cut shell off the pineapple, cut in half, remove the stalk and cut into pieces.

Cook noodles in boiling salted water for 2 minutes. In a large skillet, heat the oil. Saute tofu, snow peas, peppers and pineapple around vigorously. Add noodles and continue to saute. Add cashew nuts and chili oil, mix well and stir fry for a further 2 minutes over high heat. Remove from heat and serve hot.
