1 smaller Green cabbage (600 grams)
½ Pineapple
1 bunch scallions
1 tsp pickled green peppercorns
1 tsp red peppers
2 Tbsps butter
50 grams Whipped cream
salt
freshly ground peppers
600 grams Pork tenderloin
1 Tbsp clarified butter

Preparation steps

1.

Trim and rinse cabbage, quarter and remove stalk and thick ribs. Slice cabbage crosswise into very fine strips.

2.

Peel pineapple thoroughly, remove stalk and cut into quarters lengthwise. Halve quarters lengthwise and cut into thin slices.

3.

Rinse, trim and cut scallions diagonally into thin slices.

4.

Sauté cabbage in hot butter in a saucepan, stirring occasionally and cook covered about 8 minutes over medium heat.

5.

Add scallions, pineapple and peppercorns to cabbage and heat through. Season with salt and pepper and stir in the cream.

6.

Cut pork tenderloin into medallions, season with salt and pepper and fry in hot clarified butter on each side for about 2-3 minutes.

7.

Serve pineapple cabbage vegetables with pork medallions on plates.
