1 bunch parsley
3 Tbsps grated pecorino romano
2 eggs
100 milliliters milk
2 garlic cloves
100 grams Pastry flour
vegetable oil

Preparation steps

1.

Separate the eggs. Beat the yolks and season with salt and pepper. Stir in the flour, milk, cheese and crushed garlic. Leave the batter to rest for 30 minutes.

Peel the onions and blanch for 2 minutes in salted water. Remove and drain. Chop the parsley finely.

Beat the egg whites until very stiff and fold into the batter along with the parsley. Heat the oil and pull the onions through the batter, one by one with a fork. Fry until golden brown, remove with a slotted spoon and drain before serving.
