- 1 kilogram red onions
- 2 Tbsps clarified butter
- 250 milliliters dry white wine
- salt
- freshly ground peppers
- 2 Tbsps scallions
- 650 grams Cod (or codfish)
- 2 Tbsps Pastry flour
- lemons (juiced)
- 1 Tbsp butter

Preparation steps
1.
Peel the onions and cut lengthwise into slices.
2.
Sauté in some butter, pour in the wine and season with salt and pepper. Cover and simmer over low heat for about 20 minutes.
3.
Cut the fish fillets into 4 serving pieces, while removing any bones. Season with salt and pepper and drizzle with lemon juice. Turn in the flour and fry in some butter over medium heat until golden brown on both sides.
4.
Transfer the onions to a plate and arrange the fish fillets on top. Serve garnished with chives.
